Jagna is a recognizable face of the “Zero Waste” idea in Poland. She is an admirer and propagator of the trend of not wasting in cooking. The author of the book - the guide “Without leftovers”. Leader of the first programs in Poland on the subject of food wastage “Bez resztek. Cuisine zero waste”, “Jagna Niedzielska’s kitchen without leftovers” and co-leader of “Fork on the map” on Kitchen + channel.
It embodies a symbiosis of creative art and pragmatism. She is eager to teach and knows how to do it in order to uncompromisingly deliciously cook, but not to waste it. In cooperation with the Warsaw-based culinary studio “Cook Up”, he organizes business and zero-zero workshops where he shares his knowledge: how to plan purchases, how to store, use the products as a whole and minimize losses. The restless spirit of the Polish culinary scene. It is focused on continuous development under the watchful eye of the world’s greatest authorities of the “No Waste” trend, including Chef Douglas McMaster in the pioneering “Silo” restaurant in Brighton, England, or Helskin’s “Nolla” restaurant of the same profile. This pragmatic knowledge, taken from her internships, improves the operation of her own restaurant and catering company.
Moreover, Jagna supports her experience in creating new restaurants and improves the functioning of existing ones. She creates menu cards for catering concepts and for individual needs. She is a creator of flavours and an appreciated culinary artist - she creates innovative food design. Her recipes and photos published under the slogan “Culinary Architecture” are already known in Berlin, France, Czech Republic and the United States. She loves when flavours, textures and colours mix in her dishes, so her second speciality is Hawaiian cuisine, where traditional, paradise recipes combine, among others, the flavours of Japan, China, Thailand, the Philippines or Portugal.
Personally, she also appreciates the underestimated: the unassembled porcelain and old porcelain figurines, which she carelessly sets up in her home.
