Did you know that sourdough bread is a big hit in London?

This culinary trend has been around for several years now and is steadily gaining momentum. Many artisan bakeries offer sourdough bread, and the crusty loaf has become a staple of Londoners' breakfasts. London bakeries focus on local ingredients, organic flour and a long fermentation process, which gives the bread a deep flavour, a crispy crust and makes it easier to digest. The trend is so strong that even supermarkets (e.g. Waitrose, Sainsbury's) offer high-quality sourdough breads, often ranked as the best everyday products. Did you know that sourdough bread is a hit in London?

We visited Bread Ahead bakery in London. The bakery was established in 2000 at the famous Borough Market and has become a place visited by Londoners and food lovers from all over the world.
The Bread Ahead Baking School opened in February 2014 above the bakery, in the same building, and from the very beginning has been encouraging and showing how easy it is to bake good bread.
Much time has passed since then, and Bread Ahead has grown – the school in Borough has been expanded, and new bakeries and schools have been opened on Pavilion Road, Chelsea and Wembley. The brand recently expanded into the Middle East, opening its first international bakery and school in Jeddah, followed shortly afterwards by a second location in Dubai. Well done!

We visited the oldest location: the bakery and bread-making school at Borough Market. Molly, the school manager, showed us around. It was 11 a.m. and we looked into two workshop classrooms. Both were working on a recipe. Then we went down to the bakery. Molly told us to put on hairnets, which are required when visiting the bakery. Look at the photo to see how funny we look in them.
The Bread Ahead baking school organises popular baking workshops, mainly on baking bread and rolls, but also Italian, French, American, Scandinavian and Portuguese bread. The workshops are led by experienced teachers and allow participants to learn the secrets of artisan baking. Currently, 500 participants visit the baking school each week. That's a lot!

Bread Ahead Academy is their latest educational programme. The six-month training programme aims to create a new generation of professional bakers through theory and practice, as well as the opportunity to do an internship at Bread Ahead Bakery. They want to pass on their knowledge to students, equipping them with the skills and confidence necessary to succeed in today's dynamic world of baking.
At the end of our visit, Molly treated us to the most famous doughnut in London. Recently, the place has seen the launch of a viral bake – the crème brûlée doughnut. Inside is a delicious vanilla cream, and on top is a crispy crust.
We, in turn, gave Molly our ‘Przystanek’ apron and invited her to Poland.
